Udhampur Kaladi cheese gets technological shelf life upgrade at CFTRI Mysuru

UDHAMPUR, June 15, 2026:- Kaladi cheese, a traditional Geographical Indication tagged product from Udhampur in Jammu and Kashmir, is undergoing technological intervention at the Central Food Technological Research Institute in Mysuru, Karnataka.

Union Minister Jitendra Singh shared that scientists at the research institute have successfully extended the refrigerated shelf life of the regional cheese to 21 days while fully preserving its quality, texture, and nutritional value.

The next phase of the project focuses on converting the traditional food item into a commercially scalable product suitable for diverse recipes across professional food chains.

The Mysuru institute handling the project previously provided the technological development for the millet recipes currently utilized by major international food chains like McDonald’s.
